Smoked BBQ Chicken 3 – 5 lbs

Brine a chicken for 12 hours with 1/2 cup of salt and half cup of sugar. 3-4 bay leaves.
Rub:
- 2 tbs salt
- 2 tbs pepper
- 2 tbs smoked paprika
- 1/2 cup of brown sugar
- 2 tbs ground cayenne
This rub starts out with these measurements. Season for your taste. A little sweeter more brown sugar. A little more heat add more cayenne. Mix and apply rub.
Smoker: With apple chips smoke chicken for 3 hours. At this point start applying Jenas BBQ sauce of your choice I use Jenas sweet. For 2 more hours applying sauce ever 20 minutes. So four and a half to 5 hours smoke time total depending on the size of the chicken. Smoke at 200-225
