5lbs of Chicken

Here is the chicken….
This is for a 5lbs chicken. Brine the chicken for 12 hours.

Brine:
1/2 cup of sugar
1/2 cup of salt
3 bay leaf

Put chicken in a pale and fill 2/3 full of water. Fill the rest with ice until chicken is completely submerged. Store in the refrigerator for 12 hours. In this time soak you chips for the smoker, I use apple or cherry.

Rub:
1/2 cup of salt, pepper
1/2 cup of brown sugar
1 tea spoon of smoked paprika
1 tea spoon of granulated garlic
2 tea spoons of Cayenne powder

Now if you want the rub a little sweeter add more Brown Sugar, a little more heat add more Cayenne powder. Rub all over chicken. Set the smoker for 225-250 and smoke for 4-5 hours. During the last hour apply Jenas BBQ sauce…..Then Throw-down!

Wings were great with both sauces!
Same process for the wings as the chicken.
